I ate this like everyday and every meal (with those "food that should taste good" Multi-grain chips at Costco),
Along with Bethany's Granola balls, I think I like being healthy!
1 15 oz can black beans
1 12 oz can whole kernel corn
1 medium tomato, finely diced
3 green onions, finely diced (except I used red onion)
1/4 c lime juice
1 t cumin powder
( I added Lima beans and avocados, why not?)
- 2.We have bought tons of limes and avocados at the store. We just recently had Bethany's sweet potato chili and put avocados in it, I don't think Matt liked it unless he had avocados in it. I liked it both ways:). It was a hit!
- **For dinner I have made a fried egg, tomato, avocado, spinach sandwich, It was really good!**
- 3. We always make smoothies and we have put fresh lime juice in them recently and it also tastes really good!
- 4.We also really like the sesame stick, etc. mixtures in the organic isle bins for snacks, especially for Matt. Some mixtures have sunflowers seed and peanuts and Cajun flavoring. Matt said it reminded him of the Japanese snack mixes his dad used to get for him. They are healthy and a fun mix.
Good to know. I can't believe Matt doesn't like cilantro! I keep having to buy it and always have extra and so I started freezing it. I felt like a genius! Why haven't I been freezing it before? I'll have to post those recipes I sent you so I have them as a reference on the blog.

ReplyDeleteI don't remember freezing it in the slightest. It's been too long. I for sure can't see myself doing anything besides chopping it and sticking it in the freezer though. I will have to try it again and see if it works.
