Burrito Filling

I made this recipe to use as a burrito filling. It made a lot so I was able to freeze it for a later meal. I used ground turkey. I didn't have a can of green enchilada sauce so I put a can of green chiles, a little water, garlic, cumin, and salt in a pan and simmered it for a couple of minutes. Then I through it in with the rest of the stuff. It was a nice change from doing our usual plain bean and cheese burritos.

Sweet Potato and Black Bean Chili

Granola Energy Balls


To save time, Bethany just mashes them into a 8x8 pan and put them in the fridge. When I want one, I cut it with a spatula.

Honey Citrus Enchiladas

 Ingredients:
6 tbs honey
5 tbs fresh lime juice
1 tbs chili powder
4 cups chicken, cooked and shredded
1 can black beans, rinsed
Tortillas
Green Enchilada Sauce
Shredded Cheddar Cheese
Directions:
Mix honey, lime juice, chili powder and chicken together and marinate for at least 1 hour. Cover bottom of baking dish with a small amount of enchilada sauce. Assemble enchilada by placing a heaping spoonful of chicken , a spoonful of beans and cheese in tortillas. Roll up and place in baking dish. Top with remaining sauce and cheese. Bake at 350F for 20-30 minutes or until warmed through and cheese is melted.

I usually just use 2 cans costco canned chicken and any enchilada sauce I have on hand--usually it's red.

Chicken stock

 

I looked up organic chicken stock and although I did find it, it was very expensive. One thing I have started is home-made chicken stock. I LOVE cooking chicken in the crockpot and then freezing both the chicken and stock for later. I love having both available when I need them. I usually shred the chicken, but you could chop it, too. This recipe is great because you don't have to use it exactly. I just try to get a good amount of the ingredients i have on hand in there and cover with water. LOVE!!!!!! you do have to have room in your freezer, though.
