I made this http://www.melskitchencafe.com/2009/09/oatmeal-pancake-mix.html It is a mix you make and then put it in the fridge for anytime you want pancakes in a hurry. It has been SO nice to pull out a cup of the mix, add a couple easy ingredients, and cook up some pancakes. Quick and Easy.
