Honey Corn Bread/Muffins

Revised by Margaret Baker from Clabber Girl Recipe

1 C. corn meal
1 C. whole wheat flour--last time Bethany did 1/2 white 1/2 wheat and they turned out lighter/better
1/2 tsp. salt
4 tsp. baking powder
1 egg
1 C. milk
1/2 C. honey

Mix and bake in 8 inch square pan or make muffins. 400 degrees 20-25 min.

Last time I made these with Broccoli Cheese Soup recipe from allrecipes.com. It was a good combo.

  1. These were really good. A great healthy subsitute for the ones I usually make with yellow cake mix. (which I am having a hard time giving up) BUT I added a Tablespoon of flax and am feeling guilt-free after eating these yummy muffins!
