Bacon wrapped chicken

This is just Matt's recipe he heard about from work and decided to try. We almost made these for Father's day! We might make them at the cabin.

As I remember Matt saying....

Make as many as you like.
Take a chicken breast, cut it like a hoagie roll, don't cut it all the way in half.
Put string cheese in the middle...don't put it on the edges because the cheese might ooze too much (just right in the middle and close it. Wrap bacon around the chicken. I think Matt used 2 slices? and hold it all with toothpicks (1-3 toothpicks). Make sure it is tight and grill!
This was so crispy and flavorful!

I have gotten almost all my recipes off this website! Sheesh! Sorry if you have seen these already...

So, these were SO good! They almost reminded me of lemon bars. So I liked them, but only because they tasted like a dessert. There is SOO much butter in these and we used Apricot homemade jam (which has a lot of sugar in it still). So I don't think they are nutritious, but way better then store bought and other recipes I looked at. So if you find another recipe like this that doesn't have so much butter let me know. Also mine did not look like the ones in the picture. Mine were runny, but they still worked. I didn't roll them out I just plopped them on the cooked sheet with tin foil underneath and folded them over.

So I would definitely make these again. I am going to reduce the butter on it on see if it turns out and maybe used honey? or Carob? or fresh fruit smashed?
Then I think I would feel better eating them.

HERE Is a Healthier version I found! I substituted unsweetened applesauce for some of the butter and used plain Greek yogurt. I mashed up some strawberries and used them as the filling (so no sugar added from jam. If you are planning on eating them soon I would do this and add some powdered sugar on top for some extra sweet (but not too much;)). If you are planning to freeze or keep them in the fridge for 2 or 3 days the real strawberries start to turn gooey, turns a dark color and soggy (just not apetizing if you look at it but still yummy). I would use jam if you want to freexe or keep in fridge. ENJOY!

BBQ Chicken Pizza

I searched high and low for the perfect BBQ sauce to go on the pizza, without sugar, high fructose sugar, ketchup or brown sugar. The only thing I did add was tomato paste to thicken it up and to make it not as sour and vinegarish. I think I used tomato sauce to? either I am sure will work. You have to taste and mix to what you like.

I cubed and grilled some chicken (2-3 breasts) with Chipotle Chili powder (I had some left from the Chipotle Chili recipe found on the blog and we use the powder with a lot of things now!). Salt, pepper Garlic was added also.

I made the half white half half wheat pizza dough ( I made the fast and easy recipe so it made two medium pizzas) great for leftovers, added the sauce, the chicken, red onions, cheese, you could even add cilantro (matt doesn't like it so there wasn't a lot on ours I wanted more tho!). We even saw a recipe for parmesan cheese that you can add.
My idea came form California Pizza Kitchen. You can get ideas from their menu on new pizza dinners.

Baked Chicken Nuggets

Don't ever buy frozen chicken nuggets again! I have made these I don't know 5 times since I found this recipe. They are crispy AND easy once you have the breadcrumbs ready (if homemade).

We will be making these for the rest of our lives. Kid Friendly to!

Reminder: If not sticking to chicken add olive oil to breadcrumbs then coat. But it should stick very well. Also, I didn't use Panko breadcrumbs, but you can if you want. I also didn't use Parmesan cheese.

Veggie Burgers

Hmm.....Doesnt this look good!?!? These are SO delicious. If you like the black bean burgers or any veggie burger you will love these! My new favorite. I always put more seasoning. This recipe got 4 Stars! I had stale whole wheat bread that I had so I made a bunch of breadcrumbs and froze them. Instead of Panko Crumbs, use whole wheat ones! Also instead of buttermilk use regular milk.

I have heard that when you bread things add the oil AND bread crumbs in the same bowl and coat all at once, instead of dipping in the oil and then the breadcrumbs. They stay together a lot better. Use Wheat flour also ( I used white wheat flour). Seriously you will never want to go back to regular onion rings.

I eat these with black bean burgers and veggies burgers my favorite meals.

Fudge Brownies From Jillian Michael's Cookbook

I really liked these.  They didn't taste like brownies to me but I liked the flavor, they satisfied my chocolate craving, and they were a such a soft texture.  Definitely worth making but don't expect brownies.  They are more like a moist cake.
